Does a High Cacao Percentage mean the chocolate is darker?

No.  Pure cocoa butter is 100 percent cacao, and it has no color and no flavor.  Cocoa powder is 100 percent cacao, and it certainly is dark and flavorful, but you could never swallow it on its own.


Why is dark chocolate bitter?

Good dark chocolate, particularly the Criollo and Trinitario variatals, is not bitter.  Bitter chocolate typically comes from the less expensive Forastero varietal.  


What is coverture grade chocolate?

Coverture refers to chocolate that has at least 31% cocoa butter and which has been conched (mixed over serveral days) so that the particulate size is invisible compared to a speck of cocoa powder.
